Low-Calorie Dressing - serves 6 salad dressing
1 6-ounce can vegetable or tomato juice
1 tbsp very finely chopped onion
1 tbsp very finely chopped celery
1 tbsp very finely chopped bell pepper
1 tbsp grated carrot
1 tsp fresh lemon juice
1/2 tsp sugar
1 tbsp finely chopped fresh parsley or cilantro or 1/2 tsp dried parsley or cilantro
1/4 tsp hot pepper sauce(optional) or 1/2 tsp Worcestershire sauce (optional)
Freshly ground black pepper to taste
In a jar with a tight-fitting lid, combine all ingredients. Shake well and refrigerate for at least 2 hours, allowing flavors to blend.
Substituting other herbs such as mint, oregano, tarragon or herb seasoning for the parsley will give a range of flavored salad dressing.
