Ingredients1 each onion, chopped1 teaspoon oil, olive2 cup potatoes, chopped1 cup leeks, white only, sliced4 cup stock1 teaspoon salt1/4 teaspoon pepper, white2 tablespoon chives, fresh, chopped1/4 cup parsley, fresh, choppedIn a large pot, combine all the ingredients except the salt, pepper, chives & parsley. Cover the pot & bring to a boil. Lower heat & simmer for 30 minutes. Cool slightly, then puree. Season with salt & pepper & garnish with chives & parsley.
