Golden Rice - serves 6
1 cup long-grain rice
1 cup Chicken Stock
1 cup water
1 cinnamon stick
1 bay leaf
1/4 tsp salt
1/4 tsp ground turmeric or 1/2 tsp saffron
2 tbsp slivered almonds
Rinse in several changes of water before cooking.
In a 2-quart saucepan over medium-high heat, bring chicken stock and water to a boil. Add rice, cinnamon, bay leaf and salt; stir.
Reduce heat and simmer, covered, 20 minutes, add turmeric or saffron and stir lightly with a fork.
Continue to cook, covered, over low heat, another 10 minutes, or until rice is tender and liquid is absorbed.
Remove cinnamon stick and bay leaf. Sprinkle with almonds and serve hot.
