They have very good hearing and can locate soft sounds, and even when partly asleep (i.e. most of the time) they are tracking what is happening where. Different cats are interested in different things, and different types of play. Some cats are very into the game (and/or actual hunting) of finding and attacking things moving under other things. Once such a cat experiences you making the bed as a possible occasion for his/her favorite type of play, they may hear you doing that from far away and come to see if you’ll play that game with them.
