Oh gosh, where I live in the Sierra Nevada foothills of Ca. we have many local beekeepers and lots of honey comes from Star Thistle and wildflowers. Lupine, Shooting Stars, wild Morning Glory, Baby Blue Eyes, Five Spot, Mule Ears, Lambs Wort, on & on. A few miles up the mountain there are scads of apple prchards and they get apple blossom honey.
