Croutons - serves 16
2 tbsp olive oil
4 slices whole-wheat bread, cut into 1/4-inch cubes
1 clove garlic, crushed
In a heavy, nonstick skillet, heat oil over medium-high heat. Add bread cubes and garlic. Saute cubes, stirring frequently and shaking the pan, until the cubes are golden brown, 8-10 minutes. Remove and discard garlic.
