No. Boiling it will turn them to mush and remove a lot of the nutritional value. Spinach should be eaten raw in a salad or wilted. Wilted means steamed or heated until soft, not boiled to mush. Bok choi (and su choi) should be sauteed at high heat so that it retains some of its crispness (and all of its flavour).
