If you get a frost then  you have to dig them up before the frost hits the plants as that effects the tubers.  When the leaves turn yellow it is time to dig them up on a dry day..........let them lay on the ground to dry or on your sunny porch.  when they are dry....just use apaper towel and brush off the dirt...do not wet them.  let them cure in a warm area 85 to 90 degrees in newspaper line carboard boxes for 10 days......then store them in a cool basement.....stores for 6 months.
