answer:I’m not vegan, but I like roasted or sauteed veggies especially mushrooms, eggplant, and zuchini, with pasta or rice. I really like the Morning Star original veggie patties for something premaid. I eat them on bread or with some sort of potato on the side. I also make falafel and eat it with a side salad and sometines some pita or flatbread. Many different salads. Mixed spring greens with apples and walnuts wth rasberry dressing. Mixed greens with sesame dressing. Iceberg, carrots, celery, with Italian or balsamic vinagrette. Soups. Split pea, lentil, minestrone, pasta fagioli, vegetable.
