You could make some punch out of it for your Thanksgiving meal, or have a barbecue sooner, and have some people over. Otherwise, you can freeze it in batches in ice cube trays, then put the cubes in a freezer bag, then pop them out as you want them for juice, or cooking (good flavoring for stir fries, or marinades for meat, with added herbs and spices). Or let your grandkids have a Hawaiian themed “lemonade” stand and sell cups of pineapple juice.
