Chocolate Orange Roll - serves 8
2 cups low-fat plain yogurt
1/3 cup granulated sugar
grated rind of 1 � oranges
1/2 cup whipping cream, whipped
40 round chocolate wafers
2 oranges, sectioned OR 1 can (10 oz) mandarin oranges
In refrigerator, drain yogurt in cheesecloth-lined sieve set over bowl for 4 hours or until yogurt is 1 cup. Discard liquid.
In bowl, combine drained yogurt, sugar and orange rind. Fold in whipping cream.
Sandwich about half of mixture between wafers to make log. Ice with remaining mixture, cover and refrigerate 4 hours.
At serving time, garnish with oranges on top and around log.
