Granite is one of the toughest stones in the world and will not be affected by knives. After cutting directly on my granite countertop, I have experienced that my knives get dull after a few uses only. So cutting directly over a granite countertop will not affect the countertop material but it will affect the sharpness of your knife. I have installed granite countertop in my kitchen with the help of pros at countertopshop.net and mostly I avoid chopping things directly over the countertop. My granite kitchen countertop was installed around 4 years ago and still, it looks like a new one. Cheers!!
