The eggplant isn't always purple and does come in a range of different shapes and sizes and even colors. Maybe where you are from they mainly sell the large dark purple ones in your market called black beauty. These seem to be the most popular in the markets. However, where I'm from more people here will buy the long Chineses eggplant which is a very light purple color. This seems to be the one that is popular for cooking with fish here on the islands.  I believe this is because many people cook a lot of Chinese dishes and this is why they buy this one the most.  Eggplants are rich in fiber and low in calories and this is one of the major benefits of eating eggplant. You can actually eat this daily without any health problems at all.  There are so many dishes you can make with eggplant it isn't even funny. This is in the squash family and can be used the same as squash when cooking. Here are a few things you can make with eggplants: Bakes in the oven with seasoning and cheese Made like french fries dipped in a batter and fried. Cut up and cook with steak, fish, or even chicken in a stir-fry. Eggplant casserole.
