Cauliflower Cheesy Soup Tip: Use shredded cheddar cheese from the block itself as Bagged Shredded cheese contains anti-cake agent which on adding gives a grittier texture to soup. Ingredients:- Garlic, Shallot, Cauliflower rice, Olive Oil, Water, Vegetables, Milk, Cheddar Cheese For Taste- Salt and Pepper Recipe 1. Take a stock pot and pour some olive oil and heat on medium heat. 2. Add Garlic and shallot and cook for about 1-2 minutes until softens and fragrant. 3. Then add cauliflower rice and water and cover it with lid to steam the Cauliflower until tender. Keep on stirring it occasionally for 5-7 minutes. 4. Once cauliflower is tender then add vegetable stock in the pot and add milk along with it. Increase the heat and bring the pot to boil. 5. Now lower the heat and simmer for 5 minutes. 6. Now turn off the heat and mix Cheddar cheese and stir it until smoothens. Serving Tip:- Best served when hot topped with extra cheese, salt and pepper.
