Ingredients:
½ cup butter, softened
½ cup white sugar
½ cup packed brown sugar
1 egg
1 cup grated zucchini
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon allspice
1 cup chocolate chips
Preparation Instructions:
1. Preheat oven to 375F. Lightly grease two cookie sheets.
2. Place butter and sugars in a large bowl. Cream until smooth. Beat in egg and stir in zucchini.
3. In a separate medium bowl. Combine flour, baking soda, salt, cinnamon, and allspice; stir into zucchini mixture. Stir in chocolate chips.
4. Drop onto prepared sheets by teaspoonfuls, leaving 2 inches between each cookie.
5. Bake 8 to 10 minutes, until light golden. Cool on wire racks and serve.
Notes about this recipe:
Don't tell anybody there is zucchini in these cookies they won't be able to tell, and probably won't believe you if you did tell them!
