Vegetarian Chili
Place the following in a large crock pot:
1 cup kidney, pinto, or black beans, soaked overnight
3 - 4 cups water
1/2 cup vegetable oil
1 fresh bell pepper, chopped
1 onion, chopped
2 large carrots, sliced
2 large stalks of celery, chopped
3 cloves garlic minced (or more if desired)
1 cup bulgar
3 1/2 cups fresh tomatoes, chopped
1/4 cup tamari
2 - 3 Tbs chili powder
2 tsp ground cumin
Turn on low and cook all day. Stir occasionally.
Variations: If you like a hotter chili, add some of your favorite salsa or some cayenne pepper.
