Passata Turkey Spirals with Tomato Sauce - serves 4
4 thinly sliced turkey breast steaks
4 tsp tomato puree
1/2 cup large basil leaves
1 garlic clove, crushed
1 tbsp skimmed milk
2 tbsp wholemeal flour
Salt and pepper to taste
Passata or fresh tomato sauce and pasta with fresh basil, to serve
Place the turkey steaks on a board. If too thick, flatten them slightly by beating with a rolling pin.
Spread each turkey breast steak with tomato puree, then top with a few leaves of basil, a little crushed garlic, salt and pepper.
Rollup firmly around the filling and secure with a ******** stick. Brush with milk and sprinkle with flour to coat lightly.
Place the spirals on a foil-lined grill pan. Cook under a medium-hot grill for 20 minutes, turning them occasionally, until thoroughly cooked.
Serve hot, sliced with a spoonful or two of passata or fresh tomato sauce and pasta, sprinkled with fresh basil
