I am growing Anaheim and Serrano peppers. When are they ready to be harvested? I like "hot"peppers!

As soon as they look like the pix in the seed catalogue.  Anaheims are hottest when green; serranos can be red, green, or purple, whatever it is you bought.  Not as hot when at yellow or green stage.
