Is it the regular purple ? I find that, Eggplant is best when don't let get too big ! Small=Sweeter in my opinion, also want it firm because seeds stay tighter together ! After cutting Eggplant, (before cooking) sprinlkle salt on, and wait 10 minutes...(this drawls moisture out) then pat dry w/ paper towels before oiling, breading, or whatever prep. for recipe ! I
