Homemade Strawberry Pop Tarts recipe
This is a childhood favorite with the delicious flavors of homemade flaky pastry filled with strawberry preserves and dusted with powdered sugar. Make a large batch and save them to eat for breakfast every morning. Make 8 tarts.
Ingredients:
2 cups flour plus additional for the table
1 teaspoon sugar
1 teaspoon salt
1 cup chilled butter, cubed
3 tablespoons ice water
3/4 cup strawberry jam
Powdered sugar, optional
Directions:
In a large bowl whisk together the flour, sugar and salt.
Add the butter cubes and work it into the flour with your hands or the back of a fork. Keep working on it until the mixture resembles course meal.
Add ice water one tablespoon at a time until lumps form, about the size of peas.
Press the dough into a ball and cut in half. Wrap each half in plastic wrap and refrigerate until cool, at least one hour.
On a lightly floured surface roll the dough out into a think layer and cut into 5 inch by 3 inch rectangles.
Arrange 4 rectangles and spoon 1 or 2 tablespoons of jam in the center of each. Top with another rectangle.
Crimp the edges with a fork and place on a cookie sheet. Poke a few hole in the top of each with a toothpick.
Now, either freeze all the tarts on the cookie sheet until frozen and move to a plastic bag. Or preheat an oven to 375F and bake the tarts for 10 minutes.
To bake the tarts from frozen bake 25 to 30 minutes, or until golden. Some of the preserves may leak out.
Serve hot or at room temperature with powdered sugar on top.
These can also be made very easily by purchasing puff pastry or pie dough and cutting into squares and filling with jam.
