This is a simple, but unique sandwich that will blow your socks off and smack you in the mouth with flavor.
Ingredients:
2 slices of sourdough with a soft crumb
½ cup of chunky peanut butter
A few leaves of Thai basil. About a tablespoon.
Sriracha garlic rooster sauce
Pulp-free coconut water
1-2 tablespoons of lime juice
A dash of powdered ginger
Directions:
This is a dash recipe. By that I mean that you should add a dash of this and a dash of that until it tastes right to you. I have provided some suggested measurements, but don’t let them hold you back.
Start with about a half cup of peanut butter in a small sauce pot. Add in the lime juice, ginger, Thai basil and just enough coconut water to loosen up the mixture under heat. I know that coconut water can be a bit hard to find. If you don’t live in an area where coconut water is readily available, check online food delivery services and see if you can get your hands on some. You don’t absolutely need the coconut water, but it’s one layer in a fairly complex flavor profile and I think that the sandwich really benefits from the inclusion. Coconut milk can be used, but it’s pretty high in calories. You should not use coconut cream because it is hugely caloric and laden with sugar that might burn in the heating process and it will make the sandwich too sweet. Coconut water is the best, but if you can’t find it even with the help of online food delivery services you can use a pinch of unsweetened, shredded coconut and a splash of skim milk.
Heat the mixture slowly and stir continuously until it all blends together. If you are using the dried coconut method it will benefit from a little extra time on the stove to help the flavors blend a bit more. Allow the mixture to cool a bit, spread it on your sourdough slices and spread a liberal amount of garlic sriracha sauce on the inside of each half. Now assemble your sandwich and prepare yourself for deliciousness. If you want to take it one step further, spread some softened butter on the outside of the sandwich and grill the bread until golden brown. This is one of my favorite sandwiches and I wish there was a food delivery service that could bring me these every day for lunch.
