Beef Barley Stew
1 tbsp tomato paste
1 packet instant beef broth and seasoning mix
1 1/2 ounces uncooked medium pearl barley
1 cup each frozen pearl onions and sliced carrots
1/2 cup green beans cut in half
1 tbsp all-purposeflour
6 ounces cubed cooked top round steak
1/4 tsp each rosemary leaves and pepper
In shallow 1-quart microwavable casserole combine 1 cup water, the tomato paste and broth mix stirring to dissolve tomato paste.
Add barley and stir to combine; cover and microwave on High(100%) for 10 minutes, stirring every 21/2 minutes.
Add onions, carrots, and green beans to barley mixture. Cover and microwave on High for 5 minutes. Stirring once and rotating casserole 1/2 turn halfway through cooking.
In 1 cup liquid measure combine 1/4 cup water and the flour, stirring to dissolve flour. Stir into barley vegetable mixture. Cover and microwave on High for 5 minutes, until carrots are tender.
Add beef, rosemary, and pepper to barley-vegetable mixture and stir to combine. Cover and microwave on High for 2 minutes, until beef is heated through.
