Ginger Beef Stir-Fry with Rice - serves 4
Preparation time: 10 minutes, cooking time: 10 minutes
1 lb beef stir-fry strips, cut into strips
1 cup Renee's Gourmet Naturally Light Sesame Ginger Sauce
1 small cooking onion, sliced
1 lb frozen mixed vegetables
1/2 large red or green bell pepper, cut in thin strips
1/4 lb oyster, shitake or crimini mushrooms, sliced
Heat a lightly oiled non-stick pan or wok over medium-high heat. Add 2 tbsp of Ren�e�s sauce to beef strips before adding to pan, and stir-fry for 2-3 minutes. Remove beef from pan and set aside.
Bring pan back to medium-high temperature. Add onion and stir-fry until softened. Add other vegetables and stir-fry for 2-3 minutes.
Reduce heat and cover for 1 minute. Add remaining Ren�e�s sauce and coat vegetables well. Return beef to pan and stir-fry until beef and vegetables are hot. Serve immediately with rice or fine noodles.
