Fromage Frais Chicken with Sage - serves 4
3 tbsp skimmed milk
2 tsp mustard
1/2 cup rolled oats
3 tbsp chopped sage leaves
8 chicken thighs, skinned
1/2 low fat fromage frais
1 tsp wholegrain mustard
Salt and pepper to taste
Fresh sage leaves, to garnish
Preheat the oven to 400F. Mix together the milk and mustard.
Mix the oasts with 2 tbsp of the sage and the seasoning on a plate. Brush the chicken with the milk and press into the oasts to coat evenly.
Place the chicken on a baking sheet and bake for about 40 minutes, or until the juice run clear, not pink, when pierced through the thickest part.
Meanwhile, mix together the low fat fromage frais, mustard, remaining sage and seasoning, then serve with the chicken.
Garnish the chicken with fresh sage and serve hot or cold.
