Spaghetti with Lemon Chicken - serves 6
2 tbsps cornstarch
1 tsp salt
1 3/4 cup chicken broth
9 ozs chicken breast strips, cooked
2 tbsps bottled lemon juice
1 tbsp parsley
1 tbsp Dijon mustard
8 oz spaghetti, cooked
2 cloves garlic, minced
In a small bowl, combine cornstarch, broth, lemon juice, mustard, garlic, and salt. Mix well.
In a skillet, cook cornstarch mixture until thickened. Add chicken strips. Cook until heated through. Sprinkle parsley over top. Toss with cooked spaghetti.
