Ice cream is a nice and cold treat. However, commercial ice cream can have high numbers of fat, and sometimes there are not existing flavors of ice cream that you want. Here’s how to make ice cream without having to use an ice cream maker.
Ingredients
The following ingredients make for one serving of ice cream
1/2 cup milk or half and half
1 tablespoon sugar
1/4 teaspoon of vanilla extract or cocoa powder or chocolate syrup or any flavor that you want for your ice cream
Lots of crushed ice
Rock salt
Sealed Bag Method
Tools
Quart-sized sealable plastic bag
Gallon-sized sealable plastic bag
Mixing bowl
Rubber gloves or hand towel
Procedure
This method is best for making individual-sized servings that will be eaten immediately, as ice cream made with this method melts quickly.
Combine sugar, milk or half and half and the flavoring in a bowl. Mix well and filter, if you are using ingredients such as vanilla beans or rhubarb.
ice cream
Pour and seal in a quart-sized sealable plastic bag. Make sure that it’s tightly sealed.
Take around two quarts of crushed ice and place it in the gallon-sized sealable plastic bag. Mix in with a generous amount of rock salt. The two combined should occupy at least half of the bag.
Put the smaller bag inside the bigger plastic bag with ice. Make sure that the smaller bag is properly sealed so that it won’t spill out. Seal the bigger bag.
Start agitating the two bags by shaking, massaging and moving it around for ten to 15 minutes. Make sure that as you shake, you shake the contents of the smaller bag along. This may be a little cold on the hands, so use gloves or a hand towel to help shield you from the temperature.
Within ten to 15 minutes, the mixture should be slowly turning into ice cream. Continue shaking until you’ve gotten the desired consistency.
Take the ice cream out of the bag and eat immediately.
Freezer Method
Tools
Deep baking dish
Freezer
Whisk or hand-held mixer
Procedure
ice creamThis method is best used for richer ice cream mixtures or custard-based ones. This method also calls for a lot of patience.
Mix and filter the ice cream mixture as you wish.
Pour the mixture into a deep baking dish.
Put the dish with the mixture in the freezer and let it stay there for 45 minutes.
Take out the mixture and check if there are any forming ice crystals at the edges. Use a hand-held mixer or a whisk to break the ice crystals up. Put the mixture back into the freezer after.
Check the mixture every 30 minutes and repeat the step of mixing and breaking down the ice crystals. You will get the ice cream consistency after two to three hours of repeating.
Coffee Can Method
Tools
A big coffee can
A smaller coffee can that can fit in the bigger one
Procedure
This is similar to the sealed plastic bag method, except that you make use of coffee cans.
ice cream
Pour the ice cream mixture into the smaller coffee can. Seal the can tightly.
Put the smaller coffee can into the bigger one. Fill the rest of the space with a mixture of ice and rock salt. Seal the bigger coffee can tightly.
Agitate the bigger coffee can vigorously, or make a game out of it by letting it roll or thrown around. Give it ten minutes to do this, and check the consistency of the ice cream. If you see ice crystals forming, break it down using a whisk. Continue agitating, checking and whisking until it forms into the the ice cream consistency.
