Evaporation is the cause of cooling of water in earthen jars. When a liquid evaporates, its temperature decreases. The heat required for evaporation is supplied by the liquid. The heat of the liquid decreases due to the loss of heat. When making earthen jars, some sand is mixed with the soil and there are many small holes on the surface of the earthen jars. These holes cannot be seen with the naked eye. The water slowly evaporates through those holes. Then it wants to evaporate. The heat that water needs to evaporate comes from the water inside the earthen jar. As a result, the earthenware jug stays cold due to the continuous evaporation of heat from the water. The feeling of cold is felt as soon as you put your hand on the earthen jar.
