check your tree daily....when the bees start to sting them and before the birds come to attack them...we pick the whole tree, they still will be a little hard so we leave what we want to ripen on the covered porch check them & turn them might take up to 2 days.............and then we refrigerate to keep them from not ripening and take out what we need....we have different kinds of peach trees that ripen weeks apart.
