When the leave start to open pic it and eat it. There are commercialy 3 sizes and they are all great. Read up on how to prepare all sizes. You might only get small depending on climate and how well your plant is watered and fed. They need alot of both. My plants 1st year have small fruit. 2nd year larger. After 4 years they are about done. You can start new plants from cutting. the second year to insure you have consistant harvest and size. The plants  can get big. Account for that.
