answer:What you really want to beware of is if they have a green cast to them. This is why its not really good to keep them exposed to sunlight in those hanging baskets. The green tinge indicates the presence of Solanin which is a neurotoxin. Sometimes you are safe it you peel the potato deeper than usual. There’s nothing dangerous about sprouting afaik. It’s more of a texture thing because the sprouts use up moisture from the potato so it affects the texture. They won’t be as fluffy if your mashing them. They will be denser. But that’s aesthetics not safety. I only worry about potatoes with too much green to them. Even if they’ve sprouted, I just cut the sprouted part out and eat them anyhow. Other people toss them. To each his own.
