OK, I'm assuming for the pulled ****, you used a **** shoulder. No for the porchetta, you say you're using a loin. Totally different cuts that you serve at different temps. **** shoulder at 190-200 degrees and the loin in the 150-160 range. I'd would guess on low it's going to take in the 4-6 hour range. Loins tend to very lead--except on the outside. I'd check the temp after 4.
