If you only load for a short time (1-3 days), then definitely do not salt - just season and load in oil. And if you load for a really short time (max. 1 day), you can also use fresh herbs or vegetables in the marinade (otherwise only dried, fresh will start fermenting). For the salt of the flesh draws water.
