Fruit and Pretzel Yogurt Snacks recipe
A delicious and healthy snack, these simple fruit and pretzel snacks are a great way to add a little zest to your lunch, or a great midnight snack. Sweet raisins and salty pretzels are coated in yogurt cheese and refrigerated until they are the perfect bite-sized morsel bursting with flavor.
Ingredients:
2 c. raisins
¼ c. butter
6 c. powdered sugar.
2 c. mini-pretzels
1 ½ tsp vanilla
1 quart plain yogurt
Directions:
Line strainer or colander with cheese cloth and set over large bowl. Place yogurt in strainer and let drain overnight. Cover yogurt loosely with plastic wrap while straining.
After 12 hours, take cheesecloth and squeeze any remaining moisture out of cheese. Empty whey from bowl and let stand another 8 hours. Transfer yogurt (now a cream cheese or marscapone cheese texture) to small bowl.
Place raisins in steamer basket or strainer and place over boiling water. Steam for 5 minutes or until tender and ready to pop. Remove from heat.
Combine yogurt cream cheese and butter in heavy-bottomed saucepan. Stir over low heat until butter is melted and cheese is combined, whisking well.
Transfer yogurt to large bowl and whisk in sugar, one cup at a time, until a thick and creamy texture is achieved. Add vanilla and combine well.
Stir in raisins and pretzels. Drop by teaspoonfuls onto waxed paper and let dry, uncovered for 4 hours or overnight. Refrigerate until ready to serve.
