Yogurt Avocado Dip recipe
A light and tasty alternative to heavy dips and expensive guacamole, this Avocado Yogurt Dip combines the smooth and creamy flavors of avocado with the tangy bite of fresh yogurt. Blended with shallots, peppers, onions and herbs, this light and savory dip will be center stage at your next party.
Ingredients:
2 shallots, minced
½ c. sweet red onion, minced
½ c. green bell pepper, minced
2 Tbsp green onion, minced
2 large avocados, peeled, pitted and coarsley chopped
1 ½ Tbsp lemon juice
1 c. plain yogurt
½ tsp dried dill
½ tsp dried tarragon
¼ tsp salt
¼ tsp ground white pepper
Tortilla chips, to serve
Directions:
In large bowl combine avocado, lemon juice and yogurt. Mash together until creamy and smooth.
Season with dill, tarragon, salt and pepper and stir well to combine.
Fold in shallots, red onion, bell pepper, and onion. Stir to combine well.
Transfer to airtight container and chill 1-2 hours. Serve cold, with Tortilla Chips.
