Hot Summer Squash recipe
Ingredients:
½ cup of olive oil.
1 tablespoon of balsamic vinegar.
1 teaspoon of chopped fresh garlic.
Pinch of salt and pepper.
2 summer squashes.
3 fresh hot chilli peppers.
Preparation Instructions:
Slice the squash into quarter-inch thick rounds.
In a bowl, whisk together the olive oil, balsamic vinegar, chopped garlic, salt and pepper.
Place marinade, squash and chilli peppers in a resealable plastic bag. Seal, then turn over several times until vegetables are coated in marinade. Refrigerate until ready to grill.
Set your grill to medium high. Lightly oil grill rack. Grill the squash and chillis for a 5 minutes or until grill marks appear. Squash should be crisp tender, peppers slightly charred.
Slice the peppers in halve and remove the seeds.
Slice into small pieces, sprinkle over squash.
Serve hot or cold.
