Ingredients for Chicken:
Lemons 4
Garlic (minced) 8 cloves
Thyme 2 tsp
Cayenne pepper 1/2 tsp
Oil 1/4 cup
Chopped basil 4 tsp
Salt 2 tsp
Chicken breasts 1/2 kg
For the Lemon Sauce:
Olive oil 2 tbsp
Garlic 1 tbsp
Lemon zest of 1 lemon
Lemon juice of 2 lemons
Cream 1 cup
Salt 1 tsp
Basil 1 tbsp
Parmesan cheese 1/2 cup
To Serve:
Boiled pasta 2 cups
Method:
Add minced garlic cloves, thyme, cayenne pepper, oil, basil and salt to chicken and turn to coat. Leave overnight and then remove chicken from marinade and grill over medium heat until juices run clear.
To prepare lemon sauce, heat olive oil. Add garlic and lemon zest and sauté. Add cream, salt and lemon juice, basil, and cook. Add parmesan cheese and pour over chicken and pasta and serve.
