Taco Salad - serves 4
2 cup portion Mexican meat mix, thawed
1/2 cup salsa
4 cups shredded lettuce
2 cups chopped tomatoes
1 large green or red sweet pepper, cut into strips
1/2 cup sliced green onion
2 cups shredded Cheddar or Monterey Jack cheese
Tortilla chips
Frozen avocado dip, thawed
Dairy sour cream
Pickled jalapeno peppers or pepperoncini peppers
In a 1-1/2-quart saucepan heat thawed Mexican Meat Mix. Stir in salsa; heat through.
Place lettuce on four plates. Top with tomatoes, sweet peppers, and green onion. Spoon hot meat mixture over salad; sprinkle with cheese. Serve with tortilla chips. Dollop with avocado dip and sour cream, if desired. Garnish with peppers, if desired.
