Parmesan Braised Citrus Fennel - serves 2
1/2 cup canned ready-to-serve low-sodium chicken broth
2 tbsp lemon juice
2 tsp grated lemon peel
1 tsp each grated orange peel and chopped fresh parsley
1 garlic clove, minced
1/8 tsp pepper
3 cups thinly sliced fennel
2 tsp grated Parmesan cheese
In 10-inch nonstick skillet combine broth, lemon juice, lemon peel, orange peel, parsley, garlic, and pepper; cover and bring to a boil.
Add fennel and reduce heat to medium; cover and cook, stirring frequently, until fennel is tender-crisp, 3 to 4 minutes.
Transfer fennel mixture to serving bowl and sprinkle with cheese.
