Spicy Country Pasta and Cheese - serves 2
2 tbsp chopped onion
2 garlic cloves, minced
1 tsp olive oil
1 cup cannad Italian tomatoes(reserve liquid), seeded and chopped
5 small pitted black cured olives, cut into halves
1/8 tsp crushed red pepper
2 cups cooked penne or ziti macaroni(hot)
2 tsp grated Parmesan cheese
Garnish: fresh basil leaves
In 3-quart microwavable casserole combine onion,garlic, and oil and stir to coat. Microwave on High(100%) for 1 minute. Add mushrooms and tomatoes with reserved liquid and stir to combine. Cover and microwave on High for 7 minutes, stirring once every 3 minutes.
Add olives and pepper and stir until thoroughtly combined.
To serve, in serving bowl arrange pasta; top with mushrooom-tomato mixture and toss to combine. Sprinkle with Parmesan cheese and garnish with basil.
