Ingredients:
1 medium cucumber, halved lengthways and sliced thinly.
1 cup of fresh pea pods, halved.
¼ cup of rice vinegar.
1 tablespoon of salad oil.
2 teaspoons of toasted sesame oil.
½ teaspoon of sugar.
Pinch of salt.
½ teaspoon of red chili paste.
4 cups of napa cabbage, shredded.
½ cup of honey-roasted peanuts, coarsely chopped.
Directions:
In a mixing bowl, combine the sliced cucumber and pea pods.
In another mixing bowl stir together the rice vinegar, salad oil, sesame oil, sugar, salt and chili paste.
Pour the dressing mixture over the cucumber and pea pods, stirring to coat.
Cover and chill for 8 hours or overnight.
Stir in the shredded cabbage and chopped peanuts just before serving.
