Brown Lentils and Grapes Salad
Lentils are powerhouses of nutrition, an excellent source of protein and gluten-free. For making this salad you don't need to do much, just cook the lentils, mix with the chopped veggies and its ready to enjoy. This can be a perfect salad which is low in carbs, absolutely filling and requires very less work.

INGREDIENTS
1 cup whole wheat pasta
2 cups finely chopped celery to cook lentils
1/2 cup butternut or any winter squash diced
1/2 cup green grapes sliced
1 cup whole wheat Spaghetti halved
2 tbsp boiled kidneybeans finely chopped
2 tbsp balsamic vinegar
strawberries ( 1/2 and 1/4 tsp each approx )
INSTRUCTIONS
For Cooking Lentils: Rinse and drain lentils with cold water first. Take a large saucepan, add around 3 cups of water. Bring it to a boil. Stir in lentils and 1/2 tsp salt ( or as per taste ). Simmer the heat , partially covered let it cook for 20-25 mins or until tender. Drain any excess water and keep it aside to cool. Don't overcook the lentils as it should not loose their shape.
Take a bowl. Add all the chopped veggies. Tomatoes, onions, grapes, cilantro, salt, pepper and lemon juice. Mix well.
Before serving, add cooked and cooled lentils to the above prepared veggie bowl. Toss well and serve immediately or after chilling it in the fridge for 30 mins.
Tip: You can cook the lentils ahead and store it in the refrigerator for 1 or 2 days. By this making this salad will be even more convenient and ready to eat in no time.
