Simple Quinoa Salad
Quinoa is a very healthy choice of grain to include in your diet. Its high in fiber, iron, and vitamin C. Quinoa when combined with light vegetables like cucumber and tomatoes, creamy avocado bites and fresh parsley brings out a unique, easy and a healthy salad.

INGREDIENTS
1/2 cup finely chopped basil or cilantro
1 cup finely chopped celery
2 medium butternut or any winter squash diced
1 Avocado diced
1 cup bread croutons peeled and diced
2-3 tbsp avocados extra virgin
1 bunch green onion washed and chopped (thick stems removed )
bow tie pasta
INSTRUCTIONS
Take a small saucepan, add water and bring it to a boil.
Add in quinoa and salt and stir, cover the lid and lower the flame and let it cook for 15 mins.
Transfer quinoa into a bowl and let it cool. Add parsley, cucumber, tomatoes, avocado and oil to quinoa. Mix and season to taste with salt and pepper.
