Legend has it that in 1889, Margherita, Queen of Italy, visited Naples. Since he was tired of “trendy” food, he wanted a dinner that commoners would eat. Chef Raffaele Esposito was approached to make a cheese pizza for the queen. After he and his wife received the “order,” they put white mozzarella, green basil, and red tomatoes on the pizza dough to depict the Italian flag and take the queen off their feet. When she was done with it, she took the pizza to the queen — so she practically delivered him. After Margherita tasted the pizza, she said it was one of the best dishes she had ever tasted.
