How to Cook Deer Meat
Deer meat (venison) is low in fat and enjoyable to many. This lean meat can be cooked in various ways. However, we are going to give you one of our favorites. Many people consider deer meat to have a gamy taste, as well it does, but if cooked in chili, it just adds to the aroma and flavor. There are two ways to cook this meal, either in a slow cooker or in a Dutch oven. I will also give you a method of marinating your deer meat if you don’t have access to a butcher who will grind your deer meat for the chili.
Ingredients for an excellent deer meat chili
4 pounds of deer meat extra lean. (Ground)
2 large onion (chopped not minced to death, you want to leave some flavors in the onions and not on your cutting board.)
2 teaspoons of minced garlic (I use more but then again I love garlic.)
2 cans of peeled Italian tomatoes (some people like using just regular chopped tomato from cans however the peeled Italian ones have basil already added.)
2 tablespoons of chili powder
2 teaspoons of cumin powder
4 cans of cooked red kidney beans, preferably with no sugar added
Salt and pepper to taste
Tabasco sauce to taste.
Instructions for Cooking Deer Meat Chili in a Slow Cooker
In a frying pan, saute the onions with the garlic until they are golden brown. Then, in another pan, cook your (ground) deer meat and drain all the fat from the meat once cooked. Now, place all the ingredients into your slow cooker, adding the tomatoes, chili powder and Cummins simmer for about one hour. Once everything is marinating nicely, add your drained beans and cook for another 30 minutes. For a variation, you can serve this in individual oven-proof bowls topped with cheddar cheese, along with hot bread and a cold ****.
Instructions for Cooking Deer Meat Chili in a Dutch oven
When cooking deer meat in a Dutch oven, follow the same instructions as above, but with a different variation. Cook the meat first, then drain all the fat content out of the Dutch Oven. Then, add your onions, garlic etc. Add the rest of the ingredients into the Dutch oven and mix thoroughly. Bring the chili to a boil. Now reduce the amount of heat and simmer for about 1 hour. Sprinkle on a small amount of cheddar cheese or crumbled saltine crackers. When you are ready to serve, make sure you serve it hot and enjoy each and every morsel.
Instructions to Prepare Deer Meat Marinade
First, you need to poke holes throughout the deer meat with the help of a fork. Now, in a large bowl, take one cup vinegar, one cup vegetable oil, 2 tbsp parsley flakes, 2 tbsp ground oregano, one chopped onion, one tsp salt, one tsp pepper, 2 tbsp dried mint flakes (optional) and 1/3 cup light brown sugar. Mix the everything thoroughly. Place the deer meat in a large non-metal bowl and pour on the marinade until it is completely covered. After this procedure, cover the bowl tightly. Now, put the deer meat in the refrigerator to marinate for 24 hours. Turn the meat after every 6 to 8 hours while marinating. When you are ready to cook, take the meat out of the refrigerator. Pat it dry and it is now ready to be roasted, fried, or grilled.
