I have a rhubarb plant that does not produce red stalks -- is green rhubarb safe to eat (cooked, of course)?

Answer :

The old fashioned rhubarb has green stalks unlike the "strawberry" or red variety. The stalks are also coarser, less sweet and more tart. In our garden the green is more productive and we have always used it. If this was a recent gift planting, it is good to give the plant a season to become established before doing much picking.
