I must admit I am pretty slack about recipes but I have had good results by simply using my favorite stir fry and at the end tossing in the noodles. For a good stir fry, I start with garlic, ginger, lemon grass, onion and chillis in peanut oil and a dash of sesame oil too. Then add the veg plus soy sauce, a little siracha, dash of fish sauce or maybe some hoisin. It really depends on my mood. Sorry I am not much help. Maybe you would get better internet results if you searched for hokkien noodles, I think they are almost the same.
