Ingredients:
1 ¼ cups flour, divided
1 cup sugar, divided
½ teaspoon cinnamon
¼ teaspoon salt
½ cup butter, cut into small cubes
4 cups sliced peaches (about 2 to 3 pounds)
1 tablespoon lemon juice
1 teaspoon lemon peel
Directions:
1. Preheat oven to 400°F. Lightly grease a 9-inch square baking dish.
2. In a medium bowl, combine 1 cup flour, ½ cup sugar, cinnamon, and salt. Add butter and cut in with fork or potato masher, until the mixture resembles cornmeal.
3. In a large bowl, combine peaches, ½ cup sugar, ¼ cup flour, lemon juice, and lemon peel. Toss well to coat. Spoon evenly into prepared baking dish.
4. Sprinkle flour mixture over peaches and cover. Bake 15 minutes, remove cover, and bake 40 minutes, until golden brown and bubbling. Cool 10 minutes before serving.
