Reminiscent of a carrot cake, but with a summery, fruity kick, this peach cake has crunch, spice, and sweetness. A cake to savor.
Ingredients:
½ cup unsalted butter
½ cup sugar
½ cup packed brown sugar
4 medium eggs
1/3 cup molasses
2 peaches, peeled and chopped
2 ½ cups flour
2 teaspoons cinnamon
¾ teaspoon baking soda
½ teaspoon nutmeg
½ teaspoon salt
½ cup chopped walnuts
Whipped cream, for serving
Directions:
1. Preheat oven to 350°F. Lightly grease and flour a 9-inch square baking pan.
2. In a large bowl, beat together butter, sugar, brown sugar, and eggs. Add molasses and beat until mixed. Fold peaches into the mixture.
3. In a medium bowl, sift together flour, cinnamon, baking soda, nutmeg, and salt. Pour into wet mixture and mix gently until just combined. Stir in walnuts.
4. Pour into prepared baking pan and bake 45 minutes, or until a toothpick inserted into the center comes out clean. Cool 20 minutes, remove from baking pan, and cut into squares. Serve with whipped cream.
