Grilled cheese grows up in this recipe. Sweet, ultra-gooey Fontina cheese pairs against crispy, salty pancetta, and finished with spicy fresh basil, this sandwich becomes a household winner.
Ingredients:
1 teaspoon olive oil
4 ounces pancetta, cut into thin sliced
¼ cup unsalted butter, softened
8 slices country-style bread
1 cup shredded Fontina cheese
8 fresh basil leaves
Directions:
1. Preheat oven to 400F. Lightly grease a baking sheet with oil and arrange pancetta slices atop. Bake until lightly crisped, 8 to 10 minutes total. Remove and drain pancetta on paper towels.
2. Butter bread slices on one side. Pour four slices, buttered side down, on a cutting board. Divide cheese, basil, and reserved pancetta over each slice, and top with remaining bread slices, buttered side up.
3. Heat a large skillet or griddle over medium-high. Add arranged sandwiches and cook until golden and cheese melts, 2 to 3 minutes per side. Slice each sandwich on the diagonal and serve immediately.
