Ingredients:
8 slices whole-grain bread
12 ounces mild goat cheese, softened
3 tablespoons chopped fresh basil
1 tablespoon chopped fresh chives
1 teaspoon fresh thyme leaves
½ teaspoon salt
½ teaspoon black pepper
1 cucumber, cut into ½-inch thick slices
Directions:
Assemble four sandwiches: spread goat cheese over four slices of bread. Top with fresh herbs, salt, and pepper; press lightly with fingers to adhere. Top with cucumber slices, place remaining four slices bread on top, and serve.
